Renowned culinary website Taste Atlas has named three Vietnamese dishes - bo kho (beef stew), goi ga (chicken salad), and canh bong (pork skin soup) - among the top 100 carrot-based dishes in the world.

The rankings were compiled based on 478,833 reviews from diners and culinary experts. Notably, bo kho secured the second spot, goi ga ranked 41st, and canh bong was placed 85th.

Bo Kho: Described by Taste Atlas as “a popular Vietnamese stew,” bo kho can be enjoyed on its own or paired with bread and fresh herbs. The dish features tender beef chunks, carrots, lemongrass, cinnamon, chili, pepper, garlic, shallots, and a rich, aromatic broth. Its hearty and fragrant flavors have won it global recognition.

Goi Ga: Ranked 41st, this Vietnamese chicken salad is praised for being a “savory, crispy, and fragrant” dish. It combines shredded boiled chicken, carrots, onions, and herbs, mixed with a tangy dressing of lime, fish sauce, chili, garlic, and sugar.

Canh Bong: Also known as pork skin soup, canh bong claimed the 85th spot. The soup's main ingredient is dried pork skin (bong bi), prepared by cleaning with ginger and vinegar, sun-drying, and roasting until crisp. The broth is simmered with pork bones, and other ingredients like carrots, onions, shiitake mushrooms, wood ear mushrooms, and pork meatballs are added later. The dish is symbolic of warmth and family reunion, often enjoyed during festive occasions.
